7 inch Santoku

Pros: Sharp, light, and very sanitary
Cons: Very sharp, put in safe place!
I love this knife! I had been using everything but my 1-year old Wusthof's for as long as possible. This Global has now replaced my entire 8 piece Wusthof set. Very light and very sharp--buy & put in a safe place. Great for smaller hands, very sanitary and good for cutting just about everything!

Pros: super sharp and well balanced. light. super cool looking.
Cons: not quite as non stick as I'd like.
i can't say enough about this knife. it is extremely well balanced. you could actually balance the knife on one finger between the crook of the blade and handle. it fits the hand very well, and allows complete control. I've used it to butterfly shrimp, dice garlic and lemon grass, and it cuts through a red potato like a dream. the blade is razor sharp out of the box, you could use it to cut the edge of a sheet of paper. i used the knife to scoop up garlic with my hand and i noticed a sudden stop. turns out the knife cut into the wooden cutting board! yipes!
